Del Monaco Specialty Pastas was founded by Mike and Ernestine Del
Monaco, who brought family pasta recipes from Italy when they moved to
America in 1962. By 1964, they had already begun providing the Bay Area
with a variety of handmade pastas through a small Italian restaurant in
Cupertino, California.
Over the years, as the number and popularity of their restaurants grew,
so did the demand for the pasta. Eventually, the Del Monaco family
began selling pasta over the counter to the public in addition to
supplying it for their restaurants. Because all ravioli and tortellini
were still being made by hand, it became increasingly difficult to
produce enough pasta to satisfy the restaurant needs and the enormous
public demand.
This is when Mike and Ernestine decided to research alternate ways of
producing ravioli and tortellini without losing the quality and
freshness of handmade. What they discovered was the "Flash Freezing"
process. Pasta is frozen immediately after it is produced to capture
the pasta in its freshest state. And it is in this way that the Del
Monaco family have been able to provide their restaurants and customers
with the highest quality ravioli, tortellini, and gnocchi for so many
years.
Still to this day, nothing leaves the facility without being thoroughly
inspected and assured of quality. If they pass, all products are
ultimately awarded with a pasta's highest honor... the Del Monaco Seal

David Tsang, founder of House of Tsang and Oriental Deli, created
Starport Foods. He is a renowned chef, specialty food producer and
restaurateur. House of Tsang manufactures a line of Asian stir-fry
sauces, flavored oils, and grill sauces for retail and food service
sales. The line also produced pre-cooked frozen Asian appetizers and
entrees and instant soups. Oriental Deli was David's answer to
supermarkets that wanted an Asian take-out deli. This complete system
included kitchen design, menu and recipe development, software for
recipe and inventory management, authentic sauces and cook training.
House of Tsang and Oriental Deli were both sold to Hormel Foods in
1992. David has appeared on many television and radio shows and
commercials, taught cooking classes and authored "All That Sizzles"
cookbook.
Starport Foods was formed in 1997 to offer regional world flavors to
the food service industry, and in 1999 David added an extensive line of
Pan-Asian flavors.

imported olives, gourmet foods in retail, food service, and industrial
sizes.
VICTORIA is still a family business after 73 years and is owned by the
grandsons of the founder Pelligrino Aquilina.
As of April 1, 2002 we employ 150 full time employees and in the
growing season (August through November) employment is in the area of
200 people. There are two separate facilities in Brooklyn and a
facility in New Jersey totaling over 250,000 square feet. An additional
facility is planned for the Connecticut area in 2003.
Our main production facility and offices are located in the Canarsie
section of Brooklyn and operate 24 hours a day. These are 3 state-of-
the-art production lines capable of producing over 200,000 jars per
day.
We maintain our own in-house laboratory for all product testing
including microbiological testing.
Our in-house graphic department work in all computer formats, and has
designed, developed, and maintains this website.
We have 26 sales people, plus 3 field merchandisers with regional
offices in New England and the Midwest. In the metro New York area, we
are our own distributors and our products are sold to every major
supermarket chain. Outside the metro New York area we sell through
distributors.
As an offshoot of our branded business, we private label and co-pack
for many different firms and the list keeps growing. Our customers
range from the Fortune 100 to the self-entrepreneur and all are treated
with the same respect and dignity.
Our firm is a Kosher approved facility and is inspected by all the
appropriate State and Federal food agencies, as well as Silika and AIB
laboratories where we maintain a superior rating of 960.
